Wednesday, December 8, 2021 - No particular signs of any aging. Quince and honey notes, with an undercurrent of limey citrus and slate. Very long finish. By coincidence, paired with Pad Kee Mao from Origin (takeout this time), which echoes the pairing of 2012 Prum Auslese with the very same dish at Origin in October, which I found absolutely delightful. So is this, with a bit less intensity, but perhaps better geared to the lower heat levels that Origin is using nowadays for those mid-NJ palates.
