Thursday, December 10, 2015 - Dom Perignon Rose Dinner (Momotaro - Chicago, IL): Drank alongside the 2003 DP Rose. A very youthful bottle of champagne, but I think it shows signs of reaching the heights on the 1995 Dom Perignon Rose. Really nice combination of stoniness, cranberries, roses, & mushroom. The palate was incredibly bright with lots of structure...and that was the biggest difference between this and the 2003. This was far more firm and was a good sign that there's a lot of aging potential here.
