Thursday, February 2, 2017 - 2007 CdP retro (with sushi food pairing) (Streeterville, Chicago): Nose: The nose is fresh and aromatic with pears, apples, mineral tones, white fruits, and saline. There is a precision to this with excellent depth and balance.
Taste: Medium bodied with high acidity. The acidity has a lot of punch to it, but stays crisp with pears, apples, mineral tones, white fruits, saline, and white florals.
Overall: This is easily the best bottle I've had of the Terroirs. I didn't catch the disgorgement, but this bottle showed off a lot of class, poise, and depth across the nose and palate.
