Saturday, December 30, 2023 - Definitely give this some time to open up. First sip at 30 minutes after opening was a little sharp, much much improved after 90 minutes. Would rate this somewhat lower than the Aubert Lauren we had a few nights ago, felt like a pretty different style (or perhaps just the terroir). More flinty than the Lauren.
