Monday, July 12, 2021 - This bottle of 2016 has turned that first corner. It’s fuller, more complex, and perfectly balanced. I’m 92/3 today, but can see upside in this once it blooms. Limes, lemon, grass and Granny Smiths. The fizz has subsided, it now sizzles with salty energy. It will develop well, but highly drinkable now. Delicious. Will drink rest of case over the next 10 years to track its development.
