Wednesday, October 6, 2021 - Another bottle of the November 2018 disgorgement. 100% Pinot Noir with no dosage and this is farmed biodynamic, with credit to Bertrand for being one of the very earliest pioneers in Champagne to take clean farming to heart. I'll always remember fondly my visit to see him in 2019 and his deep passion for how he views taking care of his land and the farming onto it. To the bottle at hand, opened this about an hour ago, and it rings very true to the bottle I had a year ago in May 2020 (same disgorgement, too). Aromatically, very cool with a dried herb and mineral note mixing together. Then, cranberry, dried lime, ginger and black cherry forming the fruit core. And I swear there is a cinnamon toast note in this bottle, which flashes in my senses for a moment and then it's gone! Finishes with a dollop of mineral that freshens the wine. I paid $50 US for these and I just wish I would have bought a few more at that time. It's a wonderful bottle of Champagne.
