Tuesday, October 25, 2022 - This could easily use 4-10 more years. We drank over a couple nights. It got a 2hr slow ox in Burg glasses on night one and was mostly closed. Night 2 it fleshed out with some dark raspberry, earth, mineral & spice. 87-89 on night 2 but still reluctant to blossom into something impressive, yet. I love Chevillon & feel this will come of it shell and really sing from 2026+.
