Sunday, February 3, 2019 - Sommelier Appreciation Dinner 2019 (The Brown Residence): Medium expressive nose displaying concentrated ripe black fruit, dark milk chocolate, sap, rose, dark spices and limestone. Exceptional concentration, nicely layered concentrated slightly roasted black fruit, dense and rich, good acidity, strong mineral presence, surprisingly pronounced tannins and a long concentrated black fruit driven finish with rose and sap at the end. It expresses the ripe 05 vintage typicity more so than the producer signature. Needs minimum ten more years.

8/1/2019 4:11:00 PM - Thank you for your thoughts. I am relatively new to Burgundy, and have very little experience with profound grand cru. Okay, I have none. But, I have a few '05's in my cellar. I am 52, so I can wait ten or fifteen years, but will likely only have one shot per bottle. So, the experiences of others is key.

8/1/2019 6:25:00 PM - For my palate, most top red Burgundies need 25 to 30 years to fully mature. The 93s are at the peak, if you like a lot of tertiary notes.

8/1/2019 7:30:00 PM - I prefer older wine, and am pretty patient and have a cold cellar. I guess I will start stalking up for retirement!
