Saturday, October 21, 2023 - This is one of those stubborn '05s still unwilling to show its best stuff. Even w/ 18 full years under its belt. So after a quick taste test on opening, I decided to give it a 2hr decant b4 serving w/ our cast iron pan seared Sockeye. This helped but I still think this needs at least 3 more years to hopefully reveal more layers & achieve complete silkiness. Enjoyable but there's a real sense of resistance to showing all of it cards, yet. Sort of like trying to land a determined big Brown trout only to have it snap off.

Just had a killer 05 Rossonal Trapet Chambertin Wednesday night that started out unimpressive at home. I double decanted it and it totally rocked at the restaurant in my Burg glass. Went from thinish & ubber tight at home to amazing fruit concentration & complexity at dinner. It was far more interesting than a flight companion 13 Rousseau Charmes. Then again Chambertin should top Charmes :). But vs Rousseau it was not anticipated. 05s ! The RT Chambertin lived up to the hopes for 05.

    10/27/2023 4:49:00 PM - Craig-Yes, as you say, they are unpredictable, but as opposed to around 5 years ago, many more of the 2005's are showing signs of coming around and reaching their predicted potential. I am not nearly as hesitant about pulling the corks and giving them a go.

My 05 Rossignol Chambertin on Wednesday night was beautiful with proper time in the decanter and a good amount of time back in the btl sans cork, before drinking that night. It was superb!
