Saturday, January 28, 2023 - First time ever trying a Tribut Chablis Premier Cru, and this did not disappoint despite it being a warm vintage. It was fascinating to experience its evolution through pop and pour. In a large and wider glass, ample aromas of green apple, bruised red apple, apple core, lemon, very elegant salinity, sea breeze, some oyster shells. 30 minutes in the wine opened up further to expose a nice lanolin texture that was reminiscent of vanilla extract. Decent acidity although on the low side. A much better pairing with sushi, raw fish and seafood, than white fish with cream sauce. It has the characteristics of more classic style Chablis, and there's no harm opening this now or sometime later this year, for those who prefer freshness and vibrancy from fruit, although no harm setting it down a bit longer, but maybe no need to wait too long.
