2018 Dauvissat Family Chablis Tasting (Seattle): Aromas of cheese rind, tart to ripe yellow apple. Swirling in the glass brings out some jasmine floral notes and some savory herbs. On the palate the attack is light and mild, getting leaner and more mineral focused on the finish.

First time ever trying a Tribut Chablis Premier Cru, and this did not disappoint despite it being a warm vintage. It was fascinating to experience its evolution through pop and pour. In a large and wider glass, ample aromas of green apple, bruised red apple, apple core, lemon, very elegant salinity, sea breeze, some oyster shells. 30 minutes in the wine opened up further to expose a nice lanolin texture that was reminiscent of vanilla extract. Decent acidity although on the low side. A much better pairing with sushi, raw fish and seafood, than white fish with cream sauce. It has the characteristics of more classic style Chablis, and there's no harm opening this now or sometime later this year, for those who prefer freshness and vibrancy from fruit, although no harm setting it down a bit longer, but maybe no need to wait too long.

From magnum. A pale yellow golden hue. Nose of cool citrus and apple/white orchard fruit. A touch of ripeness, but in a very “Chablis” fashion with crisp saline notes on the nose. Very attractive. Palate was precise and concentrated with acid bright apple and citrus notes on a mineral driven and lifting mid palate that is perfect with fresh oysters or raw seafood. Good length on the finish. This impressed me overall for what I think of as a hot vintage in burgundy in general and I enjoyed this more than many 2018’s from the Côte d’Or. Quite young, however, so would give it some time.

Fresh, mineral and lifted. White floral, menthol and a gently tart green apple acidity make this a soothing drink.
A one hour cold decant helped this a lot.
