Thursday, December 22, 2022 - Solid Chablis, good structure and minerally. Nose seems a bit closed. Next day didn't budge too much either.

<edit: ignorant comment about diam10 - diam10 is legit, doesn't indicate maximal aging duration>

For me personally, I'd prefer Rav Chablis, one more data point for me that producer trumps everything.

    12/22/2022 11:22:00 PM - DIAM 10 is not ten years per se but more about oxygen transfer rates. 10 lets more through than 30 but less than 5. So it is more about how accessible to earlier drinking the peoducer wants to make their wines.

    I decided to read up more on their website, it's super confusing. Their brochure has a table showing diam10 has a 10yr mechanical guarantee: https://www.diam-closures.com/medias/brochure/3688-diam-brochure.pdf I assume that means cork can break down by year 10? The permeability and O2 transfer rates seem very similar between diam10 vs 30.
