Wednesday, January 25, 2023 - So many reviews, many spot on. A few words into the CT spit bucket.
Mouthfeel has more glycerin entry and viscosity than a typical Chablis.. Chardonayian?
Well balanced, don't find acid as worth noting.
There are ample tastes to find from citrus to nuts to minerals and yes fruit.
A wine to bring to a tasting of high end California Chards - what is this? No vanilla, no oak, no alcohol, no buttered popcorn Is this a Chardonnay or a wine? ?

    1/28/2023 6:23:00 AM - The French Chablis generally are un-oaked. My wife thinks she hates Chardonnay and so I served her Chablis and she enjoyed it. Also may help that the grape varietal isn’t listed on the bottle :)

    wine. Brief (1½-2 hours) pneumatic pressing to obtain a gentle separation of the solid and liquid parts of the
    grape. Very light static settling of the juice to preserve enough fine lees so that the alcoholic and malolactic
    fermentations can occur naturally. The must is run in small stainless steel vats. 5% of the harvest is vinified in
    French oak barrels (aged of 6 years in average).
