Sunday, January 14, 2024 - Drunk for dinner with blue cheese biscuits. 12.5%. Pale bright gold. Very full mousse and fine bead. Notes of bruised apple, quince, white flowers and a little nutiness. Firm acidity. Fresh, balanced and drinking very nicely. It will be interesting to see whether it gains complexity over the next 5-10 years. No rush to drink.
