Tuesday, October 31, 2023 - I'll pencil in 2020 as my favorite recent vintage of Roilette, with its attention-getting bouquet: black raspberry ink, savory and stable; stone perfume; salted fruit sap.
Dramatic tension in the drinking event lies in the unexpected merge of saturation, extract and structure with fleet, rollicking fruits, herbs, and seasoning—fraise, peppermint, black raspberry, violets. It's seriously drinkable and drinkably serious. I notice lots of interesting cleavage and nucleation sites for exploration. This is a responsive object, with deeply staining, fresh berry and spice essences. It is a compelling drink in 2023, and my hopes are raised for its future after 2030.

24 hours later, the last five ounces from the resealed tabletop bottle taste terrific.
