Wednesday, March 13, 2019 - Wednesday Dinner at Friends' House (Their House, Pok Fu Lam, Hong Kong): Light silver gold colour. Lightly scented perfumed lemon balm nose. Hints of butterscotch with extended time in the glass. Palate is beautiful mouthfeel...rich melted butter but with balancing broken oyster shells minerality and an enhancing acidity. Then you get this heavy melted unsalted butter on the tongue as it gets to cool room temperature and that adds another dimension. High-heeled and elegant. Beautifully made. 92+
