Friday, December 25, 2015 - This was my experimental bottle since most of these are consumed as a young age. This bottle was cellared for 5 years after purchase, granted many champers don't blossom for 10 years or more. Very noticeable is the color, a tarnished gold color hints a some age. Nose is a little sweet and leans towards a still wine as there's no yeast or bread. Crisp ripe yellow apple flavor right from the attack. Mid palate is lemon peel. Finish is very short and watery. Final verdict: probably not worth the effort of cellaring for any length of time. Pop n pour from now on.
