The Petillance is much diminished, true, but the flavors are very good, I find: still bready, slightly yeasty, a touch of caramel (good), Excellent, refreshing acidity. No oxidative notes. Accompanied a thrown together paella nearly to perfection. So the wine's character is changing, but imho it remains first-class.
