Monday, January 1, 2018 - A gentler release of pressure upon opening than a typical bottle of bubbles; a modest but persistently lively bead. Full straw to pale golden colored; on pouring, initially no telltale signs of age beyond the color; a very balanced nose and palate of ripe apple, with hint of stone, citrus and a savory note of fresh chive. Classically styled B de B. Complex but very fresh still. Over a couple hours, it mellowed and more closely resembled a fine white burgundy. Delicious.
