Sunday, December 12, 2010 - The Other Great French Blancs: Champagne and Sauternes (Wink Restaurant, Austin, Texas): Calm bubbles, looked like chardonnay (lemon with gold flecks), had a bouquet of warm yellow fruits, yeast, saline, some honeysuckle, green apple. Smooth and lightly creamy, with medium acidity, this had pronounced green apple flavors, noted by many tasters—under-ripe green apple, green apple skin, baking green apple, very intense green apple, and just green apple. Oh, and under-ripe yellow pear…… Some thought this finished with some citrus notes, chiefly lemon zest and meyer lemon, with some chalk/limestone minerality. Had very good length and a drew some good applause: “incredibly yummy,” “let’s drink it,” “delicious,” “lean and clean and doesn’t taste old.” Not the favorite by any means in this flight, but very well regarded and recommended.
