Wednesday, May 25, 2022 - One-hour decant through a screened and aerating funnel. Slight sediment in the screen. Nose of herbs and prunes during decant. Wine was clear; pinkish red bowl to an amber rim and a large clear halo. After resting, nose was subdued fruits, leather, dried herbs and a little brett. In the mouth: tannins all melted away; smooth and silky wine featuring forest floor, dried plums, herbs and a very long finish emphasizing the leather. Wonderful match with roasted meats. The wine did not decline during our three-hour meal. Shared some with staff and they too were pleased. Extraordinarily good.
