Sunday, February 1, 2015 - Light bread dough with a fresh yellow and green apple palate. The finish was quite alive, tasting with nice, refined balance. I would say that the mousse was to me pretty relaxed and the group explained that would be normal for a bubbly of this kind of age, yet the wine didn't seem flabby. More 'still' like to me than bubbly but my junior experience with older champagne, it's all a learning experience.
