Friday, December 21, 2007 - Showed much better this time, probably because of the stronger food pairing (salmon in lemon butter sauce). Still the strong, stony, puckery-tart finish, with undertones of spice. Stronger in the midpalate. In general, more crisp and lively. Flavors of citrus, pear, and maybe (this time) a bit of melon. Aromas are still rather restrained, although this time got faint earthy traces (mushroom?). Not getting as much minerality as I would expect (or like). I'm hoping that this is tight in its youth and will open up and develop complexity with bottle age. Gonna try to wait a long time on my two remaining 375s.
