I'm surprised at the youthful light yellow colour. From a cold cellar temperature, it takes some time to reveal its ripe, though not crisp, apple nose, with grilled cashew nuts following - which in turn morphs into something close to peanut and lemon pith. At three hours, what seems to be some very subtle oak shows up, though there is no mention of any ageing in oak. Very good concentration of ripe, pungent lemon and apple flavours have a bit of grip mid-palate. Fullish bodied. Though I can't taste barrique, the wine is round enough for me to think there has been some exposure to oak. A little rasp-like at the tail, which is what takes it down a half notch to very good plus. There should be another five years in this.

In top form, nice mineral quality, well rounded not too crisp. Actually paired well with my spaghetti with lobster sauce. Not sure if it can improve much more.

Pale straw gold. Scents of tangy pear and lemon, quartz and wet stones. Medium bodied, fine clarity and focus of flavors, finishing persistently and with class. Not powerful, but makes a balanced statement.

A bit more fruit - pear & lemon - and richness than my note from 9 months ago, which slightly deemphasizes the flint and grapefruit pith. Arguably friendlier now than then, and still highly enjoyable and food-friendly, though I found it a tad less thrilling.

Served with pan fried sea scallops in butter/olive oil, with dill/lemon on fettuccine, greens. Opened 30 mins ahead of dinner. Lovely smooth immediate fresh light citrus, mineral & acid, bit of fruit & grass. Opened up with more floral hints, rose even and subtle pear tones. Very fresh throughout. Medium body, medium long finish. Complemented the fresh sea scallops very nicely. Enjoyable!

Mineral, saline, oyster shell, and citrus nose. Light to medium intensity. Complex, perfumed, and elegant. On taste good balance although slightly acidic which adds to its citrus character. Good length. Very nice Chablis!

Just like I want my Chablis - it's far more about flinty minerals & fossils than fruit (which I'd say is mostly grapefruit including a little pith); it's got some body but *plenty* of acidic cut so that it's trim and energetic, not rich and flabby at all. Fantastic value!

Crisp Grape fruit aroma. Strong cherry acid which is not surprising at 13% alc. Yellow color. The acid dominates. New world wines are rarely this acid. It is a very clean taste with not off tastes so the fruit comes through clearly.

2011 vintage is as good as the '10. Biodynamic organic wine. Very nice, fruity nose. Fresh palate, fruit forward, very enjoyable. Very complimentary for foodies, especially our seafood experience at Fish House.
