Opened 3 hours before serving. Healthy medium yellow. A whiff of reduction right out of the bottle, but that was gone by time we drank the wine. Ripe citrus and light iodine. Succulent fruit, moderate salinity and acidity, excellent length. Open and drinking very well now, but not as exciting and crisp as bottles were in early 2022 and 2020. Seems to be at best at a plateau of maturity that suggest early consumption from this point onward.

A seriously good bottle of Chablis, at a perfect point in its evolution to my taste. Real heft and presence. A pleasure to drink and a great pairing with lemon risotto and sautéed shrimp.

Concentrated from the bouquet to the finish; dry, stony, almonds, gentle wood followed by a quite stony/salty impression and a superbly balanced aftertaste, again the almonds and, although white, an impression of ripe tannins, The wine has a kind of introverted style (the opposite of the 2015 Olivier Leflaive Puligny Les Enseignères); still not completely developed, still restrained. What a beauty already now, but there is maybe more to come.

Decanted for an hour. Medium yellow. I must say that this is the most exuberantly fruity Dauvissat I've had in a long while-ripe lemon drop and orange rind take the lead. Succulent, glycerine texture bolstered by great acidity. The iodine and kelp are there toward the end, but they take a back seat to the fruit. I'm not complaining, just observing, and also admiring the length of the finish. This would be Grand Cru level in many people's eyes.

Light golden in colour. Took about 30-45 mins to lose aN odd hint of oak that I hadn’t noticed in prior bottles. Thereafter Classical Chablis on the nose of oyster shells. Salty. Very clean on the palate. Lots of minerality. Still a lot of underlying acidity, framed with sweetness of fruit, suggesting a decent life ahead.Soft and giving mouthfeel.
Really continue to enjoy the wines from Dauvissat. This certainly has a generosity and welcomingness which is hard not to admire.

Pretty prominent sulfur- matchstick reduction at first, but it gives way to chalky oyster shell, citrus and tart apple all with a cool juxtaposition of waxy and steely notes. Dense, and at first pretty close to the vest, with plenty of dry extract that is still tightly coiled on opening. It fans out over a couple hours into a soil, acid and savory more than fruit driven wine. More oyster shell, chalky, steely notes, along with some honey, cashew, and citrus fruit. Chiseled yet broad. Power and precision. A contemplative, dense yet focused serious Chablis. Like licking chalky rocks. Mouthwatering. Early peak.

Perfect pale yellow/greenish color. Some transient reductive stink, white flowers, and tide pool. Classic lemon attack, herb, and guava jelly with outstanding mid-palate density and texture followed by an explosive, powerful finish laced with acidity and gravelly soil. Wow! This was fantastic and not what I had expected from previous tastings in 2016 and 2019 when the wine seemed fatter and less classic. All I can say is do not be fooled by the early richness Dauvissat wines can show in riper vintages. I have made this mistake multiple times when tasting young wines from vintages such as 2009 and 2006 (even 2003), and invariably, the wines become leaner over time. Such is the case here, and the 2012 Forest has morphed into a compelling wine.

Lemon zest and pear with a hint of liquorice at the end. Very concentrated flavor. Great weight and viscosity in the mouth. Lovely wine. Still to improve with age I think. Superb wine and I think very good value for money given what you could pay.

First time tasted since 2016 and considerably better. Medium yellow. So interesting in that it is all Chablis to start and to finish with a whole lot of the vintage in the middle. What do I mean? Well, a fragrant Chablisien nose of oyster shell and iodine is followed by a relative rich, glycerine entry of ripe pear and apple rather than citrus. This often seems to be the telltale sign of a riper vintage in this region. Fast forward to the back end, though, which has marvelous soil and incredible salinity to wrap things up. Best of all, as is often the case with Dauvissat wines, with air, everything became leaner and more focused. Still not quite integrated at the age of 6+, I think this could turn out to be a really outstanding, if not classic, bottle of La Forest.

Delicious. Light/medium yellow. A bit muted at first, but nose and palate opened up beautifully with a bit of time over course of dinner. White flowers, a bit of herb, lemon, citrus, stone, such an artful blend of subtle yet well-defined flavors. Moderate full body, lovely lasting fresh finish, balanced. Just outstanding. Drinking just great.

Surprised to see that this was the first time I had tried this. Medium yellow. Ripe nose with much more pear than saline elements which lurk in the background. Relatively rich and broad, but very good finishing acidity. Tonight, I much preferred the 2007, but this is very young and has not yet gained a lot of complexity.

This wine pours a very light straw color with a decent amount of viscosity on the legs. Initially tight, as is expected from young Burgundies, the Chablis opens up more after an hour of airing. On the nose, this is a very prototypical wine of the region. There are plenty of citrus, white stone fruits, wet stones, sea air and even honeysuckle. The palate is where the wine shines as it wrestles with great energy, concentration and remarkable precision. The wine is so well-defined with a distinct cut but without the roughness. The mineral backbone is particularly pronounced as well. Alcohol hits a bit at first, and with it brings flavors of lemons, grapefruits, peaches, white flowers and salt. The finish is quite long and the primary notes just linger around as the wine ends refreshing cut. Very enjoyable now but probably infanticide drinking this at this moment.

Another bottle from the same lot that was good but not great. This is a Camus bottle and I won't ever buy one again. My order was for Vincent but Crush delivered this instead. Doesn't punch to the level it should.

Very tight and needed a lot of air to start opening up. Side by side the Vincent Dauvissat 2013 showed much better. Going to give my remaining bottles some time to sleep.

Pale straw in color with a nose of lemon, green apple, minerality, and hints of fresh honeysuckle. The palate is outstanding with a richness that is delicious, but still with lots of Chablis crispness. The wine is clearly very young and will definitely improve with cellar time. This is an absolutely outstanding Chablis. I will definitely be looking for more.

Aged Raveneau, Dauvissat & Fevre at E&R: Nice saline and mineral aromas, and slightly spritzy. Soft palate and immediately you notice the pretty ripping acidity, offering rich flavors of lemon. Cutting quartz on the finish, saline, rich minerals and apple notes as well. Impressive body and depth.
