Decanted for 1 hour. Wow what a nose. Flinty, chalky lemon zest just soars out of the glass. Crisp, tightly wound and moderately lean palate, chalky and clenched with wonderful acidity and fruit that is just starting to blossom. Lovely complexity and nuance to the palate, a real stunner in a restrained state.

From magnum. A nose to die for. Outstanding juice and fun to imagine how good this will be over time. I'm a huge fan of PYCM 2015's, and this mag reinforces that.

A trio of 2015 PYCM - Perrieres, Batard, Chevalier. (Bellecour, Wayzata MN): The Chevalier was third of the trio, and also had four hours in the decanter and two hours in the glass. Tonight's bottle was the most constrained of our trio. And while it clearly feels, tastes, and revels in the quality that it is, it stayed tightly wound for our six hours. I'd buy more of this wine in a heartbeat, but it will likely need a lot more time to develop. Keep these 2015 Chevalier in the cellar, but don't be afraid to take a couple early spins with the 2015 Perrieres and 2015 Batard. You won't be disappointed. Remember to decant twice as long as you think you should.
