Golden pure colour. Very nice bubbles. Brioche (bread dough), dried dates/apricot, apple. After a while: vanilla, waffle dough, red apple, marmelade. Elegant, layered, fresh. Don't miss it!

NobleRottersSydney - North Italy (Fix, St James, Sydney): {cork, 12.5%} [Gordon] Fairly mature nose of yeast and bakery aromas. The palate has a real ‘cheese-on-a-biscuit’ character to the flavours. It’s medium weight, with fairly large and vigorous bubbles. Rich palate but properly dry, although it seemed to me surprisingly short and hollow on the finish. Possibly needs more time in either the glass or the cellar. I wasn’t really convinced, but I may have been in the minority.

On the initial attack the principal flavours were red fruits and ripe apples, but infused with a minerally saline element. As the wine developed there was a slight oxidative note plus a sprinkling of black pepper but on the finish there was predominantly sweet black chocolate. An impressive, complex sparkler arguably over-dominated by the chocolate character. CHP 93 pts

Not so sure of my past note. It’s flavoursome but this bottle is perhaps a tiny bit past its peak. Not for cellaring, except for the bottles with the best corks?

Bu avec la gang de FOUDUVIN au resto AVV La Suite de Sherbrooke. Fait de 50% pinot noir et 50% chardonnay. Il fait plus fin, sec et timide que les 2 autres, frais et vif avec une belle acidité. Surtout des citrons avec un peu de brioche et une pointe de levures. Très bon!

"2019" Sydney International Wine Show - stewarding notes; 10/7/2018-10/12/2018 (Blue Mountains, NSW): {12%} Bread and yeast nose. Fresh palate, very dry, light-bodied, surprisingly under-developed for a decade old, but likely a recent disgorgement I should think. Less yeasty on the palate then you’d think. Medium acid, and with medium-sized delicate bubbles. Medium length finish, and seems like a wine which needs to cellar a while longer now.
