  • Took a while to open up - was super tight and needed decanting. Muted nose that got more interesting with time but the palate went from linear to complex over 1.5 hrs. Great chablis but still young and tight.

  • A very enjoyable and focused bottle of Dauvissat Sechet 2017 that was showing very well at present pop and pour. Green apple, lemon, lemon pith, dried flowers, a touch of salinity, almond paste, and just a hint of oak that blends it all together with very elegant acidity. It seems quite linear, and I would say less complex in general if compared to Vaillons (in general). Strangely while this wine is quite fabulous by itself, it was a bit too specific in some aspects and lacked ability to pair with a range of food. Perhaps this explains why, in addition to reduced quantities in the market even upon release, that you very rarely see Secher / Sechet Chablis on wine lists (at least in my area). Some might say hold it longer, but I can’t expect this to be any better right now.

  • Miscellaneous Wines from Beaune and Chablis; 11/6/2022-11/10/2022: At La Dilettante, Beaune. Light yellow. Faint florality and citrus. Mediun weight, lovely texture, classic lemon/iodine mix with fantastic underpinning of stone and juicy acidity. Not as lean or linear as Séchets can be at this age. Classic and deeply satisfying.

    Retasted the next day when it had more herbs, vanillin, and roundness. It is surprisingly broad for young Séchets and doesn’t have the drive of the best vintages of this cru.

  • Simon's Dauvissat dinner (Lorne): Surprisingly open: it didn't feel at all premature to open this. A fairly subtle nose compared to the Raveneau, but lots going on: caraway, steel, saline oyster and, with air, even icing sugar. Incisive on the palate, smoky, full of zesty lime, then a lovely development through the mid-palate, accelerating towards a chewy finish with a touch of cream. Superb - my WOTN, group joint #3.

  • Trying another bottle of the 2017 Séchet beside the last glass of the excellent 2017 Forest, it’s not too far behind. Similar gold colour, a little darker than the Forest. A nose of apricot, peach, grapefruit and jasmine florals. Not hugely mineral or saline. Different on palate. Firm, persistent acidity. Less volume and concentration than the Forest and a touch less fine. Pears, lemon and grapefruit with traces of green apple and a thread of wet limestone minerality. A relatively long saline finish. Ideally hold until 2023+.

    N citrus fruit, lees, minerals, sea air
    P lemon, lime, little chalk, minerals, lees
    F long in length, nice mouthfeel, high acid
    Overall a nice racy white that can be enjoyed now, but will improve with cellaring.

  • I thought I’d broach one of these 1ers early, to get a handle on vintage and producer ... and wow! Look at the quality here. Real Chablis typicity: minerality, oyster shell and chalk. But also ripe, rich citrus and orchard fruit. Elegant and refined. But cut through by a fine bead of precise acidity. Some attractive green apple, greengage and lime juice. Surprisingly open and approachable. Very drinkable this early but it will - with this acid backbone - no doubt cellar 5-10+ years. Brilliant!
