Just singing with rack of lamb. This is really an ideal food wine at this point. High alcohol and residual young tannin gets muted by the food and it's just deleriously good. The To-Kalon tropical fruit is so fun.

Popped and poured. Drinking great from the start, although it evolved significantly in the glass over two hours and went through a confused phase for about an hour in the middle, so perhaps an hour decant might be in order. Very feminine nose that smelled to me like Cab Franc. Lots of swirling extraction, young tannin, not much acid. Delicious fruit from To Kalon vineyard but I would prefer more purity of expression; this tasted somehow like a blend than a single-vineyard effort.

Nose and flavor profile changed over the course of 2-3 hour decant. Initial nose showed powerful fruit which mirrored the rich, full body of the wine. Over the course of decanting the wine, nose moved away from fruit and more towards some dust and vegetal notes. This was a great wine. Tasted the 2010 in December which was absolutely fantastic. Tannins on the 2005 were still pretty potent, so will wait a couple of years before opening our next bottle.

Acquired at the winery to try at the restaurant tonite- big thanks to Matt for everything. Deep, dark, almost opaque. Amazingly huge nose of fresh black berry, hint of blue berry, trace of cream, cedar. On the palate, fruit driven with ripe plum and black berry, soft fine grain tannin, enough acidity to keep the fruits clean and fresh - smooth, clean and goes a long way like one of Tiger's swing before the beating. Drinks awesome now, not sure how its going to age as the tannin is already very smooth and kinda fading, but may have enough acid backbone to age?

Smooth black fruits. 2 hour decant, needed more and some time in the cellar. Elegant and smooth with medium richness. Tokalon backbone is hiding in there.
