Decant. 5yrs mark, wanted to see what this wine offer. Wine is dark red, lots of fine sediments. Smell: black currant, cherry, faint eucalyptus Palate: bell pepper, some spicy notes, cocao, sweet tannins, high alcohol but balance. The finish isnt long. Expected more from this 407, its drinking well now but not beautiful. Need more depth.

The notes cover this wine, as it is a basic delicious example of CS. Nice balance from color to finish and from the spectrum of flavors. Smooth enough to enjoy on its own. Structured enough to pair well with heartier fare. Doesn't mind sitting ignored for a couple of days... it'll be there when you need it. QPR is solid.

Again, an excellent wine from a renowned producer. Cherry and blackcurrant with notes of leather with grippy tannins. Long fruit filled finish. Needed a while to open up but once it did it did not disappoint. A great Aussie red.

Cherry and some nice hints of oak, some tar in the background as well which may be too prominent for some. Light on the finish. Probably needs age, but not bad now anyway.

Consistent with previous notes, Rich bold flavours of Dark Cherry & Blackberry, Cedar and Earth. Tannins are firm and ripe with medium acidity. Finish is long with Cherry and spice. Just an excellent exhibit of what Penfolds does well at a good price.

Rich & bold fruit, Blackberry & Dark Cherry with Cedar & Tobacco. Firm tannins & medium acidity keep the taste buds interested. Intense long finish with Dark Cherry, Pepper & hint of Oak. Flavour builds as it opens in the glass. Still young but impressive. I wonder how much 707 grape is in this?

Super perfume-y. Green pepper comes through in the bouquet and much more strongly on the palate. Quite tangy. Finish is not nearly as long as as the Bin 28 or 138.

100% Cabernet Sauvignon that is a multi-regional blend from South Australia sourced from Coonawarra, McLaren Vale, Barossa Valley, Wrattonbully and Padthaway. 12 months in French oak (25% new) and American oak hogshead (9% new). Decanted.
The nose shows rich aromas cassis, Luxardo cherry, blackberry preserve and plum pastilles that weave in and out of the scents of mint, licorice, toasted star anise, chocolate truffles, suede, candied violets, vanilla bean, shaved coconut, toasted oak, spice and earth. The palate shows incredible concentration and density while retaining freshness. Fine, sweet tannins and juicy acidity. Flavors of spearmint laced cassis, blackberry compote, Luxardo cherry, Danish pastry, vanilla, sweet anise, black licorice, violet, coconut, rubbed herbs and toasty oak are all in balance and penetrating. The finish is plush and long. This wine has a long life in front of it.

Declassified 707 fruit (which was not made in 2017) which is called the "Cab Grange". Good weight, balance, earth notes, coffee, good but not that exciting IMHO. At Monopole with Zoe of Penfolds. 89-90

2017 was a well regarded. Not the biggest. But maybe the best?
Mint but with strong concentration. Mainly from the south and cooler. Regionally. These regions are quite flat. And much closer.to the close. Good grip to the very long finish. I sense the donut issue going with the Cab versus the blends.
10 - 12 days on skin. Much shorter than napa. This has free run and pressings together. They want to do that because of the structure from the pressings. For them its 100% pressing. No cold soaking here. 18% french new oak, 14% american hogshead.
Harvested 24 hours round the clock. But then harvested and immediately chilled. 95%.of what they pick is machine harvest and then optical sorted. 24 hours processing. And 2.5 ton bins
All the wines are all acidified.
