Citrus, some hay and flowers, slight pear and herbal tones on the nose. The slender palate adds strong broadband acidity, as well as some lemon and grapefruit. Long finish, tapering towards the acids. Elegant, quite understated and acid-driven, as well as very versatile with food. Perhaps a few years will open up the fruit department a bit more.

I was wishing that I was in Flörsheim-Dalsheim this last weekend so I wanted to open something that would help to at least partially transport me to be with friends and enjoy the warmth of that beautiful family and place. Asparagus is coming into season and I thought I would go with the obvious pairing and roast some white asparagus and lemons with toasted almonds to go with this delicious Silvaner. What a great match! This was wonderfully fresh with sweet herbs, delicate wildflowers and a core of limestone to bring me to those vineyards. The fruit notes had great grip and reminded me of apples skin, quince and grapefruit. The nose had a flutter of smoke that was woven into the herbaceous floral tones. This is such a beautiful wine to drink while you wait on the Feuervogel and dream about Austernfels.
