  • Pale yellow color.

    Flinty reduction, scents of honeysuckle, acacia flower, and oyster shell. White peach fruit is pure and carries nice weight. Lemon card sensation from high acidity. Strong salinity and mineral texture. Maybe a slight touch of fennel-celery note. Finish medium length with honed lemon and floral note.

    (The candied edge, which I initially thought to be Botrytis, was probably coming from very slightly sun-dried grapes. Good to sort that out.)

    This is a well-structured Chablis. It has everything that we expect in 1er Cru Chablis. It's so nice to have that acidity backbone back in Chablis.
