  • Pale yellow color.

    Flinty reduction, scents of honeysuckle, acacia flower, and oyster shell. White peach fruit is pure and carries nice weight. Lemon card sensation from high acidity. Strong salinity and mineral texture. Maybe a slight touch of fennel-celery note. Finish medium length with honed lemon and floral note.

    (Both scent and flavor had ever so slightly candied/honeyed edges, which reminds me of Botrytis. But, nobody who tasted with me noticed Botrytis influence. So, I might be mistaken here. I mention it here to see anyone else noticed the same.)

    This is a well-structured Chablis. It has everything that we expect in 1er Cru Chablis. It's so nice to have that acidity backbone back in Chablis.
