Deep golden, verging on rust in color, notes of honey, apricot, butterscotch, golden delicious apple and chanterelles. Tangy acid balances juicy sweetness, yielding flavors of slightly bitter lychee, melon, apple and Meyer lemon. Presently at a mature but good drinking point. Best suited to more delicately flavored foods.

Alongside with the Batard from Sauzet and Ramonet. Beautiful. Fruit, freshness, acidity and length. definitely winning from batard from Ramones this time.

Pausing for the Cause 2022 (Chicago, IL): From magnum. Not premoxed (which is rare for 2007 Boillot). Generously oaked and thickly textured, with lots and lots of orchard fruit on the nose and palate here. In this format, this wine seems like it still has ages to go.

A superb birthday dinner (Amsterdam): A golden colour, spices, the acidity shows a certain age, refined, recognizable bitters, starting a bit unbalanced, but with air the wine ameliorated considerably. Don't wait with this elegant 1er cru.

{Bought on release, sound cork, 2 mm ullage; tasted with DE and DH over dinner with 2005 Sauzet Batard} Rich, incisive, full of stones and white fruit nose, quite deep and integrated across forepalate, midpalate, finish. Honeysuckle and quince there too; the balance in this wine is near perfect. Great nose. I scored this equal to the Sauzet Batard but prefer this wine as still a bit fresher and will easily go another decade, may go u a point or two if it keeps going this way. All of the premier and grand cru H Boillot 2007s are killers!

Initially nose with popcorn and butter, vanilla and oak. 10 minutes later only Mersault butter was still present.
Rich and full lenght with complex mid palette. Not so PM in style, no citrus or obious minerality. Just so fantastic now and one of the best white wines ever tasted.
Reminds me of 2004 PM Folatiers from Leroy from the time before the world went crazy on her prices.

Rich, mouth-filling, fruit and nuts, length. Good acids. Still many years to drink at its top-plateau, will probably even get smoother and rounder. A beauty.

Solid - thankfully not poxed, and showing very nicely with ripe fruit, oak/buttered popcorn, stony minerality, and faint herbal notes all coming together on a medium weight frame that has enough acidity to give it a crisp, refreshing feel.

Dinner with Henri Boillot (Chicago, IL): Either no one at the table thought this was premoxed, or everyone was too polite to say something (myself included, I suppose), but this is the third vineyard in 2007 where I've found premox in Henri Boillot's wines. I had brought this bottle as a sacrificial lamb to gauge reactions, but by and large, reactions seemed to be positive. Perhaps that was part of being tied up with the spirit of the evening (which was splendid), but I'm digressing too much. This wine was premoxed. I've had plenty of premoxed 2007 Henri Boillots. I'm done with that vintage.

Not premoxed, unlike a Corton-Charlemagne that I experienced a few months ago. To be sure, this wine seems like it's a prime candidate for it, with its fairly ripe profile and relatively low reduction. There's an enticing waxy fruitiness on the nose that hints at the fullness on the palate. And full it is on the palate, with the expected touch of oak as well. This isn't one of those modern reductive white-hot mineral shivs (which I love); this feels much more like an older style of white Burgundy; something you might get from the 90s (no premox jokes please). It's fleshy and big, and delicious all the same.

Kaleidoscopic flinty white stone fruit and pear nose. On the palate, this comes off as a bit flat and one dimensional. There is good fruit, good balance, acid, and length -- that's about it. Far from dazzling, which is what I had anticipated. Not too much of a change on day 2. Maybe in an awkward phase? Hold.

I had a bottle recently at Dover in Brooklyn... The wine took our breath away. Everyone became quiet as the power and elegance settled in on our first taste.

Beautiful expression. Lush and silky, with acidity for the long haul. Excellent burgundy at this price. Part of a long night of burgundy tasting, mostly Pinot Noir.

Gorgeous, expressive, multi-dimensional bouquet. Layers of aroma: white flowers; blanched almonds and other nuts; honey; oat biscuit; lemon; pears; some minerals. No detectable sulphurs and oak nicely in check. On palate, just below medium weight, but good depth and power. Attractive, but not racy acids. Citric, honey and lactic flavours. Oak well integrated. A very good, well made, technically correct 1er Puligny. However, not, tonight, the complexity on palate suggested by the bouquet, or present in the 2007 de Montille Le Cailleret we also had. It was also worrying how as the Boillot warmed and opened, it tended to loose focus, with the oak becoming over prominent, which did not happen with the Cailleret. Approachable, but now a little four square, perhaps it needs more time? Still, good, 91.

Brilliant wines on a cold Wellington Night (Normandale, Lower Hutt, Wellington, New Zealand): Great young Puligny. Brilliant focused nose with textbook caramel, nuts, oats and a minerality that ties it all together. In the mouth - superb definition, bright textures and lengthy finish. Even at this early stage - which to my taste is a few years shy of its plateau of maturity - this is fine wine.

Light gold. Effusive aromatics of white flowers, ripe lemons and lightly roasted nuts. Medium- to full-bodied in the mouth, with citrus, pear, powdered stone and a hint of oak on the palate. Finishes very long, with a whiplash of minerals and powerful acidity. A thoroughly seductive wine, even in this early stage of its development, with cashmere-like texture and near Grand-Cru weight and depth of flavors. Will improve with a few years of cellaring.

Le nez est floral, miellé, boisé avec un côté caramel, et citronné. En bouche, le vin est d'une belle pureté tout en étant très large, suave et minéral... avec cette longueur propre aux grands vins. Superbe acidité. C'est très équilibré... Magnifique! Prix : un peu plus de 50 euros.
La bourgogne au plus haut niveau... 19/20

Absolutely mind-boggling sense of depth, acidity, and citrusy flavors. This is one of those wines that has aged extremely well for 4+ years, yet show stunning youth and growth for the years ahead of us. The bottle was downed pretty much by myself (wife had a small glass) in 1 hour exactly, without decanting, and it was ridiculously good. Really, white wine at its finest.

A typical Pucelles 07 from H. Boillot, which carries high levels of acidity, but extremely well balanced with the citrusy, lemony notes that this wine exhibits. This is a wine of pure finesse and elegance that is yet powerful on the palate and extremely long on the finish. Will age with ease in the cellar.

A private dinner (Restaurant Northcote Manor *, Langho, Blackburn, UK): At this young age already incredibly charming, perfectly absorbed oak, unmistakably Pucelles: creamy lemon, superb salty minerality, fantastic steely acidity that carries the enormous finish, almost painfully concentrated, with a wildness that is reminiscent of the best Folatieres. Leaves nothing to be desired. Drink 2013 - 2022.
