Terrific showing. Vraiment Neuf in the cool, upright style with dusty fruit, tertiary notes, garrigue. Well structured, well balanced, a joy to drink. And it’s not like I’m usually a fan of Sabon’s wines.

Great Châteauneuf in the glass. Mature with notes of garrigue, but the fruit is running through with freshness and purity. This is a pleasure to drink with roasted lamb from the BBQ.

Opened 2 hours before dinner. We had this with beef. Surprisingly youthful colour. Not a flamboyant nose but lovely integration on the palate and decent length. It has the more feminine characteristics typical of the 99s.

Decanted 3 hours; consumed over 8 hours. A softer, more delicate style that’s reminiscent of a light, Burgundian-styled, American pinot Noir from the Northwest. Hours 3- 5 show earth, smoke, and light barnyard notes upfront with some fruit in the distant background. Hour 5 sees a transition to a more balanced blending, as the earthy notes stay anchored and the fruit begins to emerge to take more of a shared front seat. Recommend drinking over that 3 to 6 hour window to see the transition. Good terrior expression, but it's more of a whisper than a shout. Drink ‘em now if you got ‘em, as this one seemed like it maybe getting a little light in the nose and getting a bit thin in the glass; likely at, or just slightly past its peak. Good deal at $50, and even a square deal at $75.

Slight leaker. I also think this might be just a bit corked. Despite that it's quite a nice wine with true Rhone garrigue, medium body, but a bit of bite at the end. I'm not surprised this had a bit of wine squirting up the cork- I bought it at Sam's!

Dinner at Grace: Tight bouquet gives-up notes of chalk and fresh popcorn oil. Medium-bodied on the palate with juicy acidity. Lots of kirsch on the palate. I really enjoyed this wine, and preferred it over the '99 Beaucastel.

was leaking slightly out of the cork so i had to drink it; at the upper shoulder. great bouquet, this bottle drinking well right out of the bottle, but admittedly had a bit of air to start.

Sabon Prestige/Secret Vertical (Restaurant AOC): Sweet red currant nose and raspberries. Animalistic.
The palate is mostly acidic and almost no fruit. Clearly over the top!
