2007 Domaine Jean-Louis Chave Hermitage

Prototypical Chave. Olive, meats, pepper, menthol. Still fairly astringent and a tad early. Explored over 5 hours, continued to evolve and open up. Will revisit our next bottle in 3-5 years.
