Palate: extra brut, high acidity, medium- body, creamy texture, fine perlage. Not sure if it does through malo (heard it doesn’t), but I noted some butter, in addition to honey apple crumble, vanilla etc. Enjoyed with a tasting menu at Le Parc Les Crayeres in Reims.

Palate: high chalk acidity, delicate fine perlage, creamy texture, medium body, after taste similar to nose characteristics with brioche, nuts from the late disgorgement in lees and spices. Had difficulties noting the citrus there. Enjoyed with maialeto and lemon risotto.

Appearance: red, ruby with a small development halo.
Nose: lots of cherries, mushroom and some tertiary game notes of sous bois.
Palate: dry, high acidity, medium alcohol (13%), medium body, medium- tannins. After taste of cherries, licorice, earthy notes and condiments. In a blind taste, I could have confused it with a (good) Brunello - probably because of the cherries and licorice. Still worth aging a bit longer, despite 2003 being a very hot year. Enjoyed with a duck risotto.

Appearance: white, old golden towards bronze.
Nose: complex nose with toast, nuts and spices.
