11/18/2021 2:28:00 AM - I do agree that it is difficult to expect how certain wine will change with age. You can make assumption based on your own experience, but especially good producers might differ from the general trends. Only way to learn is to attend to vertical tasting of the producer where you have wines from different centuries. Also you need so many samples, that if one of them is bad bottle that it doesn't skew your judgement. It is also important to let the wine breath. Good wines can easily evolve the next 24 hours. So if you (for example in a restaurant) open bottle, decant 30 minutes, consume in next 30 minutes, you might miss a lot of nuances.
7/10/2021 9:31:00 AM - If my comments disagree with Chave, I’d go with his opinion every time. I mean EVERY time.
However, I tend to prefer my white Rhône’s on the fresh side. My opinion is that the wine will plateau here an additional 5 years before displaying any oxidation characteristics, which some connoisseurs appreciate. But not me.
