Light yellow color in the glass, clear looking throughout with tiny, steady beading. Nose of toast, baked apple pie and yellow pears. Flavors of yellow pears, green apples and a splash of lemon/lime. Bright acidity, full bodied. Drink or hold.

This champagne has come into its own. I am not a fan of blanc de blanc. The 100% chardonnay based champagnes are typically way to dry and acidic for my palate. This wine has matured and filled out, much like a good white burgundy, with age. In fact the color is characteristic of a white burgundy with age. My wife calls it the "Pee Pee" color. There is a toastiness and richness that I typically wouldn't associate with Blanc de Blanc and in fact if I tasted it blind I would guess it was a traditional champagne blend The wine looks Yellow gold colored. The legs are Medium.

A very good wine. Well made with clean flavors, soft texture and good length. Some toasty notes with freshly baked biscuits and green apple. I enjoyed this one. Ropom for further development.
