Tasting Training for WSET Level 4, Units D4 + D5 - Session 8: Wine 1: The wine has a pale lemon colour. The nose has medium intensity of aromas and has primary characteristics of floral notes (blossom), citrus fruit (lemon) and green fruit (green apple) as well as secondary characteristics from autolysis that include biscuit, rye bread, bread dough and smoke.
On the palate the wine is dry, with medium-plus acidity, medium alcohol and a medium(-) body. The flavour intensity is medium, flavours mostly mirror the aromas from the nose and include primary floral notes (blossom), citrus fruit (lemon) and green fruit (green apple) as well as secondary characteristics from autolysis that include biscuit, bread crust, bread dough and smoke. The mousse is comprised of medium-sized bubbles, the finish has medium length.
This is a good quality sparkling wine since it has medium complexity, good balance of fruit and acidity, and good length. To be considered being of outstanding quality the wine would need finer mousse, greater complexity, and greater length.
The wine is ready to drink. It does not have enough fruit concentration to improve with further time in bottle and is hence not suitable for further ageing in bottle.

Monthly tasting club LTC 2015-02; France: Alsace. (@ MM): Quite yeasty bouquet with white fruits like apples. On the palate hardly any mousse, some yellow fruits, minerals and slightly sweet impressions. Overall an ok basic bubble.
