Feb 2021 disgorge; 9g/L dosage. bright and smooth sparkler!
has a very pale salmon colour with very small persistent bubbles and an elegant mousse. the nose is a delicate and delightful bouquet of strawberries, roses, and whiffs of almond pastry. it has a medium-bodied feel in mouth, lightened by an acidic core that balances the bright red fruit flavours and very moderate yeastiness. very enjoyable long finish.
was great with sushi and soft floral-flavoured macarons (rose, jasmin, lavender)

Light salmon color. Large vigorous bubbles. Mild yeast and raspberry/strawberry nose and flavor. Medium to full body with modest acidity. Somewhat plump mouthfeel. Frankly, I was slightly disappointed in this for a New Year’s Eve bubbly.

The Sixth Annual World's Largest Blind Tasting of American Sparkling Wine (Houston, Texas): Retail $40. 58% Pinot Noir, 42% Chardonnay. Whoa. Autolytic and fruity on the nose with plenty of red berry fruit. Yum. There is no drop-off on the palate either. Great fruit, acidity, and balance. Yum. Outstanding. 94 Points.
