Mature pinot funk blows off to reveal red fruits, earthy loam, herbs and that certain core Burgundy-ness. I don't have the experience to talk about typical NSG flavor profiles vs. Volnay or whatever, but this does scratch the itch for mature Burgundy. Really lovely with simple roast salmon and fingerling potatoes. The last glass, post dinner, clamps down with a hard wall of tannin on the finish. Maybe time in the decanter, maybe the lack of food, but less enjoyable than earlier in the evening.

Sandle wood, molasses, and subtle perfumed notes.
Moderate tannins, body, and length.
