Very intriguing, I'm guessing I opened this a little soon, which surprises me as I tend to find Minervois ages quickly.
I say this because initially this was quite a tight wine, fairly expressive on the nose (vanilla, cherry, caramel?) but pretty muted when tasted. After 36 hours opened, the nose was the same but more pronounced, but the palate had a little more fruit too it, and a bit more depth. It could turn out to be a decent wine if held for a bit longer IMO.
