Beautifully mature, with secondary and tertiary notes, but also plenty of freshness and verve keeping it all alive in the glass. Really beautiful now but if you like them really old you could hold this longer provided it has been properly stored.

A blend of Chardonnay (80%) and Pinot Noir (20%) sourced from Napa (60%), Mendocino (20%), Sonoma (12%) and Marin (8%). Kept on the lees for 69 months. Dosage 11,5 g/l.
Rich, developed, apricot yellow color. Dry and a little bit restrained yet incredibly complex and attractive nose with initial aromas of cream, browned butter and peach and more textural nuances of baked bread, some smoke, sweet wood hints and a whiff of vanilla. The taste is as rich as a Californian sparkler can be, but with taut and serious structure: the palate is incredibly crisp and energetic. Flavors of bread, cream, spice, butter, lemon curd, tart green apples, barely ripe yellow plums and some roasted almonds. Fine and elegant yet grippy and persistent mousse, incredibly laser-like acidity. Rich, mature and lingering finish with developed flavors of nutty toastiness, vanilla creme brioche, some lemon curd and a hint of Granny Smith apple.
By far the most convincing new world sparkling wine I've ever had! If served blind, I'd guess this was a fine prestige cuvée from some of the acclaimed grand marquées with some serious bottle age. With its mature complexity and superb structure, this is utterly charming, elegant and so tasty stuff that it can best some of the best Champagnes with relative ease. Will easily hold until 2020, probably even further. No wonder they say Schramsberg is the best US sparkling producer. At 59,50€ this was a treat at ridiculously low price.

Drinking very well at the moment, lots of complex green fruit notes, citrus, green apple. Smooth, well balanced and dangerously easy to drink.
