Four Decades of Seppelt Show Sparkling Shiraz (Otto Sydney): Enjoyed alongside the 1996 vintage of the same wine. Pale golden in colour. Restrained nose at first, typically tight and slow to show itself. Thirty minutes in the glass and the wine begins to open. Its still very subtle but with hazelnuts, lemon peel and lovely mouthfeel. A classic Corton Charlemange and a wine aging at a glacial pace, best decanted before service. Beautiful wine and a great pair, thank you Ian B.
