This ripe and plummy Cabernet has past its peak, offering now mature fruit but not a lot more. Light red in color; medium in body; aromas of blueberry, prune, and spice cake. Flavors of blackberry, tapenade, and sour cherry, with a silky and brief finish. Blend of 80% Cabernet Sauvignon, 11% Merlot, and 9% Cab Franc. 14.1% alcohol. Made by Mark Aubert.
The 2000 Les Pavots, which I tasted last month, had far more nuance and energy, as did the 1998 Bryant, which I tasted this summer. With more than two decades behind us, though, who knows as to to the reasons - but I'd recommend drinking this bottle now.

Tasted alongside the '97. In comparison the '98 has a more fragrant nose, stronger fruit, tannins not quite as soft. Very drinkable now, but will hold up well in the cellar for a while longer. Fair bit of sediment, should be decanted.

Gave about 2 hours of Slo-O, and it needed all of it and then some to fully open up. That said tasted fairly mature, so I don't know if another 10 years will help, but no rush now.

California Cabernet 2010 or older (Capital Grille): All I can say is that this wine is very pretty. This wine was elegant and sly in a different way than I've experienced. There was a lot of crisp red fruit.

Left to air for 40 mins. Probably could have sat for more. Smooth and best with sauce. Good with veal. Great nose and depth. Still good.
