From 2013 release, so in-bottle for 10yrs (start of 3rd case) and probably the 2007 debut vintage - nothing on cork or label. This continues to be a wonderfully taut under-the-radar brut zero champagne. 50/50 pinot chardonnay, only 10% new oak, fermented 10 months then 60 month maturation sur latte - all in barrique. Zero dosage. Very vinous with noticeably ripeness and body from fruit, combined with piercing acidity - fantastic with food but also matches aged cigars well. No oaky or creamy notes at all, and just a little yeast. This is almost all fresh lime, lemon, minerals and notes of jasmin - a 1er Chablis with bubbles. With extended air the wine deepens with dried apricot and ginger notes. Love it. Enjoy this most weekends with eggs Royale brunch - cuts through the salmon and butter. Drink to 2025
