NC Cindy Tasting. "Baller Night" (NC Wino's Stately Wayne Manor): A blend of 50% Xarello, 30% Macabeo, and 20% Parellada, this is light yellow in the glass with a hint of a greenish tinge and nice, small bubbles. The nose is delicate, but pleasant, showing green apples, yeast, and a very slight rubbery overtone. It is quite mineral-driven on the palate, with slate and a slightly metallic edge over more of that tart apple, some under-ripe pear and just a squeeze of lemon. It has a medium-long finish, which I find somewhat surprising for a Cava in the $14 range. This is a really nice wine at that price.

Jujube Ole Imports Wine Dinner (Jujube Restaraunt Chapel Hill NC): 1st wine of the Jujube Ole Imports Wine Dinner, served with a crispy celery and walnut salad with kumquat and black vinegar. Light apple notes with touches of yeast and hay and healthy dose of dry stone minerality. Obviously dry as a Brut, and not a great amount of citrus, which actually added a nice dry contrast to the acidity of the kumquats and the vinegar. The dryness also kept the walnuts from finishing with a bitter aftertaste. Truly a surprising transformation with and without the Cava. As a wine, this Cava gets an overall B+ with the $13.99 price tag (B+ Cava quality / B+ value) but an absolute A for the pairing!

WSET III, part 2; 12/3/2011-12/4/2011 (Portland, ME): Medium-minus lemon color; good persistence of mousse. Clean, youthful nose of rubber, oak, and some butter. Dry. Medium body, medium-plus acid. Bready, earthy, with very little fruit expressed. Good.
