  • (Slow lunch with Dale, Dina and Werns at Red Star) Quite a lean sav blanc as they go, this bottle exhibits white truffle and a healthy pong upon opening, giving way to white flowers, faint cut-grass and almost-green apples. A shale-y minerality, its fresh, crisp acidity paired rather well with the surimi fishballs and yong taufu stuffing, while with kai-lan it expressed a creamy butteryness. Drink fresh and well chilled!
