  • Dinner at Waku-Ghin (Waku-Ghin, Marina Bay Sands, Singapore): I liked this very much. It had a beautiful nose that could almost have belonged to a Puligny with its little nutty accents, red apple flesh aromas, white flowers and stony minerality. It was only the extra layer of oak, deftly used though it was, and a little veneer of ripeness that gave it away as a new world Chard. Very attractive. I felt the palate did not quite live up to the promise of the bouquet, but it was still really nice, with a lovely fresh elegance to its rather rich flavours of sweet lemons, pears and ripe green apples just shading into stone fruit territory. It had a lovely depth and nice breadth of flavours, and it was only the noticeable touch of alcohol mingling with the spice, lemon and flower infused finish that threw the wine off slightly. Otherwise, I thought this was very stylish effort. Very good, extremely food friendly, and should get even better with some time.
